This is one of those recipes that comes to life when you need to make food but you have random ingredients in your fridge, freezer and cupboard and don’t have the money or the time to go buy more ingredients to make something you know. A challenge I should put myself through more often since it led me to create this incredible and versatile pea mash. Versatile because you can have it as a side dish, spread on bread as an appetiser or even under a poach egg; let me introduce you to the new Instagram dish: poached egg and pesto mushy peas on toast!
That’s right! This is the mash-up of homemade pesto and pea puree with the addition of a magic ingredient: roasted artichoke. So not only do you get deliciousness but you also eat 2 of your 5 a day in one go! #foodgoals
When I told my friend Jess about my new creation, she came up with the name “Posh Mushy Peas” and so I bring it to you!
To make enough for two you will need:
-200g peas (use fresh or frozen)
-120g roasted artichoke kept in oil
-30g fresh parmesan, grated
-a good handful of fresh basil
-salt and pepper
You will also need a food processor.
- Cook your peas in boiling salted water.
- Meanwhile, grate your parmesan and add it to the food processor along with the artichoke. Blend.
- Add the basil, the cooked peas and pepper (no need for more salt, you already have the cheese) and blend again. Stop to scrape down the mixture and keep blending until you get the texture you want. I like it quite smooth but still a bit chunky personally.
That’s it! Serve! (Note: If you want it more runny you can always add a tbsp of hot water).
